Omelet with stewed zucchini
- Wash and dry the zucchini. Cut off the stem and slice it into thin pieces.
- In a non-stick pan, heat 1 tablespoon of vegetable oil over medium-high heat.
- Once the oil is hot, add the chopped zucchini and sauté for about 5 minutes until it softens and turns slightly golden brown.
- In a small bowl, beat the eggs with a fork until they are well combined. Add salt and pepper to taste.
