Zucchini omelette

  • Coarsely grate the zucchinis and lightly sprinkle them with salt. Leave for 5 minutes to allow the salt to draw out the excess liquid.
  • In a separate bowl, beat the eggs with a fork and add in the Provence herbs.
  • Squeeze out the excess liquid from the zucchinis and mix them with the eggs.
