- Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Cut the broccoli and cauliflower into florets or bite-sized pieces, removing any tough stems or leaves.
- Bring a large pot of water to a boil. Once the water is boiling, add the broccoli and cauliflower pieces and cook for exactly 3 minutes. This will blanch them slightly, making them tender.
- Drain the broccoli and cauliflower in a colander and set aside to cool slightly.
- In a medium-sized bowl, beat the eggs with a fork until well combined. Add the salt, black pepper (if desired), and paprika (if desired) to the beaten eggs and mix well.
- Grease a baking dish with cooking spray or oil to prevent sticking. Place the blanched broccoli and cauliflower in the greased baking dish.
