Chickpea puree soup
- Place the dried chickpeas in a bowl and cover them with water. Allow the chickpeas to soak overnight to soften them.
- Drain the soaked chickpeas and transfer them to a large pot. Fill the pot with enough water to cover the chickpeas completely.
- Bring the water to a boil over medium-high heat. Reduce the heat to low and simmer the chickpeas for about 1 to 1.5 hours or until they become tender and almost homogeneous. Skim off any foam or impurities that rise to the surface while boiling.
- Once the chickpeas are cooked, drain them and transfer them to a blender or food processor. Add your favorite spices, such as cumin, paprika, garlic powder, or chili powder, to the blender. Sprinkle some salt according to your taste preferences.
- Blend the mixture until it reaches a smooth and creamy consistency. You can add a little water or vegetable broth if needed to achieve the desired texture.
