Couscous with tuna
- Rinse the couscous in a fine mesh strainer and place it in a large bowl.
- Pour enough boiling water to cover the couscous by about 1/2 inch. Cover the bowl with a lid or plastic wrap and let it sit for 10 minutes or until the couscous is tender.
- In the meantime, heat the olive oil in a skillet over medium heat. Add the diced tomatoes and peppers and cook for 5-10 minutes or until the vegetables are tender.
