Omelet with green onions and grilled tofu
- In a mixing bowl, beat 2 eggs with a fork until the yolks and whites are well combined.
- Add 1/4 cup of finely chopped onions to the bowl and mix well with the eggs. Season with salt and pepper to taste.
- Preheat a non-stick pan over medium heat. If you're not using a non-stick pan, you can add 1 tablespoon of vegetable oil to prevent the eggs from sticking.
- Once the pan is heated, pour the egg mixture into the pan and cook over low heat for 3-5 minutes or until the eggs are set and golden brown on the bottom.
